Where could you buy Poppy Ski's Pierogi, a loaf from The Jawnery Bakery, or Bailys Dairy milk in downtown West Chester at 7 p.m. on a Wednesday? Until late August there wasn't a dependable answer. Now there is, and it sits across from the courthouse.
The West Chester Co-op at 204 W. Market St. opened to shoppers in late August. MyChesCo reported that it opened in a downtown that had "gone decades without a traditional supermarket." The bigger change for anyone living in the borough has to do with timing. For years, buying from Chester County farms and bakeries in town meant showing up on a Saturday morning. The co-op keeps many of those producers on its shelves for 84 hours a week.
The Saturday window, and the store that stays open after it
The baseline is the West Chester Growers Market at Church and Chestnut streets. Its posted regular season runs May through December, every Saturday from 9 a.m. to 1 p.m. In January it switches to a winter schedule of the 1st, 3rd and 5th Saturdays, 10 a.m. to noon, through April.
The co-op is open 8 a.m. to 8 p.m., seven days a week. Over a month, the two schedules compare like this:
| Season | Growers Market, Church & Chestnut | West Chester Co-op, 204 W. Market St. |
|---|---|---|
| Now through December | Every Saturday, 9 a.m. to 1 p.m. | Daily, 8 a.m. to 8 p.m. |
| January through April | 1st, 3rd and 5th Saturdays, 10 a.m. to noon | Daily, 8 a.m. to 8 p.m. |
| Approximate weekly hours, November | 4 | 84 |
| Approximate weekly hours, February | 2 or fewer on average | 84 |
The Saturday market is where you meet the farmer. The co-op is where that same category of food is still available on a Tuesday night, and that matters most in the stretch from January to April, when the market meets only a few mornings a month. Anyone can shop there. As Food Co-op Initiative put it in its opening announcement, "you do not have to be a member-owner to shop."
What's on the shelves, sorted by how far it traveled
The co-op says its local sourcing generally covers producers within about 100 miles. Many of them are much closer. Here are the suppliers named in coverage and on the co-op's own vendor page, grouped by distance:
- West Chester itself: Unruly Nature, Sneaky Brew, Poppy Ski's Pierogi, Mindfully Mina's, Golden Valley Roasters and The Jawnery Bakery
- Elsewhere in Chester County: Vera Pasta, Bailys Dairy, Chaikhana Chai, Good Girls Bakery, Baba's Brew and Swarmbustin' Honey
- Produce, from nine miles out to Lancaster County: Bryn Clovis Farm in Malvern, about nine miles from the store, plus Paradise Organics, Lancaster Farm Fresh Cooperative and Four Seasons Produce in Ephrata
- Regional pantry names: Green Lion Breads, Merzbacher's Bakery, Fishtown Pickle Project, Natural by Nature, Side Project Jerky and Black Cauldron Popcorn
- In the dairy case: White Horse Farm yogurt, which the co-op has highlighted on its Instagram
Food Co-op Initiative described the store as a full-service grocery with organic produce, grab-and-go meals, a bulk section and everyday essentials. It also mentioned new deals every other Wednesday. The Daily Local News summed up the core of the store as mostly locally sourced milk, bread, meats and vegetables.
For the producers on that first list, a shelf on West Market Street is a second way to sell in their own town. MyChesCo said the supplier strategy "gives small producers another route to consumers" by putting many businesses' products in one downtown spot.
Eleven years to fill an empty storefront
Getting those producers onto one set of shelves took a long time. Food Co-op Initiative lists the cooperative's incorporation date as February 2015. After that came pop-up markets, fundraising and development work before the store opened in August 2026. The soft opening was Aug. 20, and the ribbon-cutting grand opening was Friday, Oct. 2.
At the grand opening, board member Judy "Foodie" Carrino told the crowd, according to the Daily Local News:
"We believed, we persisted, we built it, we did it. Every person who carries the baton brings us here."
The same report quoted store team leader Issa Ostrander on the space. "When we started it was just an empty shell," he said. "This is your store, the community store." Bridget Palombo of the Food Trust spoke about a $75,000 grant from what the paper called the Pennsylvania Fresh Food Financial Initiative. Sue Patterson, a volunteer who has been involved since the beginning, said she "thought it might be a half marathon but it turned out to be a long one."
A small store that depends on weekday shoppers
The store is compact. Food Co-op Initiative lists more than 2,600 square feet of retail space within 3,900 total square feet, and MyChesCo gives the store's size as 2,800 square feet. As of MyChesCo's Sept. 1 report, it had one full-time and 11 part-time employees. Food Co-op Initiative named Ralph Young as assistant store manager.
That scale is why the seven-day schedule matters. MyChesCo framed the opening as a practical test of the cooperative model. Now that the store is open, the challenge is to keep sales steady and attract both members and nonmembers. A store this size can't run on one busy Saturday. It needs people stopping in on weekday evenings too.
Membership has grown since opening day:
| Date | Member-owners | Source |
|---|---|---|
| At opening, August 2026 | 833 | Food Co-op Initiative |
| Sept. 1, 2026 | 845 | MyChesCo |
| Oct. 7, 2026 | 868 | Daily Local News |
That's 35 more member-owners in roughly seven weeks after the doors opened. The Daily Local reported that the co-op is still accepting new members.
What ownership costs
The co-op's become-an-owner page lists three ways to pay for a share. Each one adds up to $400:
- $400 paid once
- A $100 deposit, then 12 monthly payments of $25
- 16 monthly payments of $25
According to the co-op's ownership terms, membership is held by household with one vote per household. Members can vote for directors and can run for the board, and there's no work requirement. The co-op's FAQ lists member benefits such as special in-store sales. Those terms are dated 2017, so it's best to ask the co-op directly about current member perks.
Getting there in November
The co-op describes its location as directly across from the courthouse, next to a parking garage and the bus terminal. Its hours and location page includes borough parking tips that come in handy over the next few weeks. The holiday rules are the page's own, and the 2026 dates come from the calendar:
- Street parking is free Saturdays from 8 a.m. to 5 p.m. and all day Sunday.
- Meters are enforced Monday through Wednesday from 8 a.m. to 10 p.m., Thursday and Friday from 8 a.m. to midnight, and Saturday from 5 p.m. to midnight.
- Meters are enforced on General Election Day, Tuesday, Nov. 3, and on Veterans Day, Wednesday, Nov. 11.
- Meters are not enforced on Thanksgiving, Thursday, Nov. 26.
The co-op opens at 8 a.m. and the growers market at 9, so on any Saturday through December you can shop both before 1 p.m. on free street parking. On weekdays, the co-op's 8 p.m. closing time means West Chester's local milk and bread are still on sale after work.
